INGREDIENTS 1 cup of Northern White Beans 1 cup of Wheat Kernals 1 cup of Cowpeas ¼ cup of Green Onions thinly sliced ¼ cup of Celery finely chopped ¼ cup of Red Pepper Finely chopped 1 teaspoon of Garlic
HERB DRESSING 2 teaspoons Dijon mustard 4 tablespoons Apple Cider Vinegar 4 tablespoons Heloi Rice Bran Oil 1 teaspoon of Fresh Rosemary finely chopped 1 teaspoon of Fresh Thyme finely chopped Salt and pepper
INSTRUCTION
Boil the northern white beans, wheat kernals and the cowpeas in separate pots for 45 minutes.
After boiling for 45 minutes, turn off burner and let sit in hot water for an hour, until tender. Strain and cool.
Whisk together mustard, vinegar, rosemary and thyme in a medium bowl. Then slowly add Heloi Rice Brand oil. Season with salt and pepper.
Toss all ingredients together in a large bowl.
