Roast Gala Apple Vinaigrette

INGREDIENTS

½ cup Heloi Rice Bran Oil
1 Gala Apple, peeled, cored, and diced
1/3 cup fresh Lemon Juice
2 teaspoons Honey
3 tablespoons Apple Cider Vinegar
2 teaspoons Dijon mustard
2 teaspoons fresh Thyme finely chopped
1 teaspoon Lemon Zest (optional)
Salt and Black Pepper


INSTRUCTION

Add the gala apple together with the apple cidar vinaigrette into a blender. Process until smooth.

Whisk together apple puree, lemon juice, honey,Dijon, thyme, and lemon zest. Then slowly add Heloi Rice Bran Oil. Season with Salt and Pepper.

A fresh goat cheese and walnut salad, garnished with dried cranberries, would pair nicely with this vinaigrette.
